Potato Rosti Bruch

Serve with smashed avocado and poached egg for a delicious brunch.

Ingredients

120g Paxo Potato Rosti Cake Mix​
260ml boiling water​
4 eggs​
1 avocado​
1 tbsp vegetable oil

Instructions

Step one

Empty sachet contents into bowl and add 260ml of boiling water and mix well​.

Step two

Leave to stand for 5 mins​.

Step three

Shape into 4 evenly sized rosti cakes​.

Step four

Heat a little vegetable oil in a non-stick pan then cook rosti cakes over a low to medium heat for 10-12 mins, turning throughout, ensuring rosti cakes are browned and piping hot​.

Step five

Whilst cooking, poach 4 eggs and slice the avocado​.

Step six

Serve and enjoy.
