You will need
You will need:
120g Paxo Potato Rosti Cake Mix
260ml boiling water
4 eggs
1 avocado
1 tbsp vegetable oil
Instructions
Empty sachet contents into bowl and add 260ml of boiling water and mix well
Leave to stand for 5 mins
Shape into 4 evenly sized rosti cakes
Heat a little vegetable oil in a non-stick pan then cook rosti cakes over a low to medium heat for 10-12 mins, turning throughout, ensuring rosti cakes are browned and piping hot
Whilst cooking, poach 4 eggs and slice the avocado
Serve and enjoy
