Paxo Potato Rosti Brunch

You will need

  • 120g Paxo Potato Rosti Cake Mix​
  • 260ml boiling water​
  • 4 eggs​
  • 1 avocado​
  • 1 tbsp vegetable oil

Instructions

    • Empty sachet contents into bowl and add 260ml of boiling water and mix well​
    • Leave to stand for 5 mins​
    • Shape into 4 evenly sized rosti cakes​
    • Heat a little vegetable oil in a non-stick pan then cook rosti cakes over a low to medium heat for 10-12 mins, turning throughout, ensuring rosti cakes are browned and piping hot​
    • Whilst cooking, poach 4 eggs and slice the avocado​
    • Serve and enjoy
